My experience at Ichiban was mediocre at best. The menu had a lot of speciality rolls. I ordered the Jazz roll - which was pretty good. I also ordered a Salmon roll - which I don't think had much salmon at all. It was almost all rice. I also ordered a rainbow roll that has crab inside - it was rather dry. The service was attentive and ambience was unique being located in a former church. Ichiban is nothing great but is worth a try if only for the ambience.
Pros: Ambience
Cons: Sushi was just ok

The outdoor dining is great and the specials on mon-tues are definitely a bonus Overall the sushi is good but not amazing. Most of the rolls are the usual with nothing really a standout on the rolls - BUT the sea bass cheek appitizer - YUMMY!! It is a must try. Very white and delicate with tremendous flavor. It can have a wait on friday and saturday night. The ambiance is good as it is an old, converted church with beautful stained glass windows.
Pros: nice group seating upstairs, nice outdoor area for seating, specials make it worth while
Cons: parking can be a pain - but short walk to alternative parking

Umm Ichiban is not as good as it used to be. They still have excellent service in a beautiful environment but the sushi is mediocre at best. We even had to send back a roll because it tasted fishy - I mean it tasted off. Eww. We should have gone to Takashi which has crappy service but incredible sushi...
Pros: Great Service, Beautiful Building
Cons: Bad Sushi

I know I am going to eat sushi, but i have always know that fish is bad when it taste like you are eatting fish. every thrid bite taste like fish which means the fish was old. If you are willing to take a chance go ahead but I have had better sushi in Salt Lake.
Pros: Great location
Cons: old fish

All I can say is WOW. If you don't mind the wait, this is definately the best. You will have to strategically plan you visit to fully enjoy Ichiban Sushi, because parketing and seating can be limited during the peak of business. I would recommend the mussel shooters for starters. Excellent Sushi; an explosion of flavors.
Pros: Excellent Food
Cons: Small waiting area.

I love sushi, I have been all over the world and look forward to eating sushi when I travel. Granted I have had better Sushi elsewhere such as Boston, Los Angles, Japan, Australia, etc. But when in Utah I head to Ichiban. (Takashi is another good choice but smaller) It started in Park City and was bought out and then owner Peggi Whiting moved down to Salt Lake and was recently bought out again, she had to be doing something right. The liquor menu is vast with many options for anyone who likes to drink, myself included. The rolls are what they are, crafted for your tastes. GO GO GO!
Pros: Good food good times
Cons: Pricey but worth it

Anyone thinking this place has good sushi doesn't know what good sushi is--period! But then again, how many Utahns would even dare venture forth to, say, New York, or--gasp--San Francisco! The fact that Ichiban gets voted "best seafood" is either typical Republican ballot-stuffing or just pure ignorance and wishful thinking on their part; this place wouldn't last a week in any major metropolitan city, and obviously not in Park City, either. Something tells me Ol' Peggy got run outta that town! Perhaps we should do the same--she and her restaurant are an insult to epicurians everywhere! I'll just cut to the chase--you don't have to be a gourmand or a fishmonger to know that fresh fish, especially for sushi, is bright and shiny in appearence, clean to the nose and fresh and delightful to the palate. You needn't be an accountant to know a Rainbow Roll should be larger than an Oscar Mayer Wiener for $10.95, or do you have to be an oenophile to know a horrid and over-priced wine list when you see one. You do, however, have to be somewhat more cosmopolitan that the average Utahn, because it's this kind of ignorance (denial?) that allows places like this to exist. Unfortunately, the restaurant "reviewers", like those found here and elsewhere in our local media, are nothing more than thinly disguised advertisers, pseudo-pundits legitmizing the mugging of the consumer. Go read a good book and come to your own conclusions. And Good Luck!
Pros: One French Sparkler by the glass, a bottle of Italian Prosecco and a Kiwi Savignon Blanc...
Cons: ...but like most restaurants, the rest of the wine list was horrid and all were over-priced.

This place has EVERYTHING! The setting is in a remodeled church. They have great service, awesome sushi, and a really cool floor seating section. You HAVE to go to the Ichiban.
Pros: It's the best sushi place I've ever been to

Being our first time here, I was pleasantly surprised by the atmosphere. The prices were comparable to other mid-scale restaurants in the downtown area, and the Yellowfin sushi was amazing, as were our entrees, which were plated with an artistic flair and were as impressive in presentation as they were in taste. Our server's assistant was very attentive with water refills, but unfortunately the same could not be said for our server herself, who was rarely seen outside of food delivery. Inattentive service was the only low point of our visit, and we plan to return in hopes that this is not the norm.

Ichiban used to be our favorite sushi restaurant when Peggy owned it. The rolls were bigger, the prices were cheaper and the staff was better. My husband and I went yesterday for our anniversary and were even more disappointed than the time we went several months ago. The rolls are so much smaller, the prices are extremely high (the rolls are averaging $2 a slice), My Funky Charlie roll was missing the crunchy ends (the best part!), they don't even give you the wet cloths afterwards to wipe your hands with. It seems like they have new staff everytime we go. The newest sushi roller looks like he's in grade school and the wait staff look like they're in punk bands. Ichiban is falling apart.
Pros: Good tasting sushi
Cons: Price
